Freezer Feast

Before Joyful Eating I spent a lot of “will” avoiding my favorites …then giving in and over eating. Now I make what I call freezer feasts. Having foods I love waiting for me in the freezer is the key to keeping me on program. I no longer have to stuff myself when in the presence of yummy food. I can now embrace them in sensible portions and know that they will be waiting for me as an option next time I am physically hungry. I was running out of goodies in my freezer so I cooked up a supply yesterday.

I love using silicon muffin cups the large ones are 1 cup and the small ones are a little over 1/4 cup

Kitchen sink casserole… I started with my specialty alfredo sauce and added brown rice, chicken pieces and favorite veggies ( 1 cup serving)

Fresh off the farm frozen sweetened strawberries 1/4 cup 1/4 cup of lemon cake all it needs is a splash of 1/2 and 1/2..I will pre-cut the cake and freeze it also.

Homemade granola.. this is 1/2 cup and for breakfast I add 1/2 banana, a couple almonds for crunch maybe some frozen blue berries then add milk or yogurt This is so good and easy to make.. I don’t even want boxed cereals ( an old snack craving for me)

The last 2 are the same thing ( one is in the muffin cup other is out) 1 cup each of grandma’s homemade noodles cooked in broth of a whole chicken.. ( I split the meat between the noodles and the casserole.)

Altogether I have about 20 main courses of some of my very favorites!!

I always freeze my portions under 1 cup so I can add extras to the meal.
